We kicked off our Mexican Caribbean visit in Cancun at @Canopy By Hilton La Isla, where we enjoyed a four-course meal. We started with an Organic Beet Salad with Goat Cheese and a traditional Tortilla soup with avocado. For the main course, we had a choice of Braised Short Ribs with glazed carrots, turnip celery puree & vegetables or Shrimp Sizes with rice with butter, citrus fruits and tlayuda. For dessert, we had the best Tres Leches Cake made in a white chocolate egg. A huge thanks to Rodrigo Arellano for his fantastic hospitality and compliments to Chef Daniel Franco for an amazing Mexican culinary experience.
