Known for her vibrant Caribbean flavours and creative approach to traditional cuisine, Chef Cuffy prepared a delicious traditional Callaloo soup paired with crispy Caribbean fish cakes, creating a warm and comforting dish perfect for the festive season.

A Taste of St. Vincent and the Grenadines

Chef Sonia Cuffy hails from the stunning Caribbean nation of Saint Vincent and the Grenadines, an island known for its lush landscapes, rich cultural heritage, and bold culinary traditions. Caribbean cuisine from St. Vincent blends African, Indigenous, and European influences, resulting in dishes that are both flavorful and deeply rooted in history.

One of the highlights of the evening was Callaloo soup, a beloved Caribbean dish made with leafy greens, herbs, coconut milk, and spices. The soup is often considered a comfort food across the region and is especially popular during family gatherings and holiday celebrations.

Traditional Caribbean Callaloo Soup and Fish Cakes

Chef Cuffy’s version of Callaloo soup was rich, creamy, and full of Caribbean flavour, perfectly complemented by golden fried fish cakes. The fish cakes—crispy on the outside and tender on the inside—added the perfect savoury bite to accompany the hearty soup.

Together, the dish captured the essence of Caribbean holiday cooking: simple ingredients transformed into something extraordinary through tradition, technique, and love.
